Lemon Herb Salmon and Avocado Quinoa Bowl

Looking for a fresh and healthy dinner? This Lemon Herb Salmon and Avocado Quinoa Bowl is light, delicious, and oh-so-satisfying! 

Ingredients:
– 2 salmon fillets (about 6 oz each)
– Juice of 1 lemon
– 1 tbsp fresh dill, chopped
– 1 tbsp fresh parsley, chopped
– 2 cloves garlic, minced
– 1 cup quinoa
– 2 cups water or broth
– 1 avocado, sliced
– Salt and pepper to taste

Directions:
1. Start by rinsing your quinoa under some cold water to remove any bitterness. In a medium pot, combine the quinoa with 2 cups of water or broth. Bring this to a nice boil, then reduce the heat, cover it up, and let it simmer for about 15 minutes, or until all that liquid is absorbed. Once done, fluff it with a fork and set aside.

2. While the quinoa is cooking, let’s prepare that fabulous salmon! In a bowl, mix together the juice of your lemon, chopped dill, parsley, minced garlic, and a pinch of salt and pepper. Place your salmon fillets into this marinade and let them soak up those amazing flavors for 15 to 30 minutes.

3. Now, heat up your grill or skillet to medium-high. When it’s hot, place the marinated salmon on it and cook for about 4-5 minutes on each side, or until it’s beautifully cooked through and deliciously flaky.

4. To serve, layer your cooked quinoa in a bowl, place the salmon on top, and don’t forget to add those lovely slices of avocado. If you’re feeling fancy, sprinkle a few extra herbs on top for that final touch!
